~Good Soup~

We had this soup for Supper this past week. Oh boy, was it good!

Cheddar and Potato Soup
  • 1 Onion, diced
  • 4 Tbsp. Butter
  • 1/4 C. Flour
  • 1 tsp. Dry Mustard
  • 1/2 tsp. Cayenne (This isn’t enough to be spicy, just adds some flavor.)
  • 4 C. Chicken Broth
  • 1 1/2 C. Carrots, diced
  • 1 1/2 C. Potatoes, diced
  • 2 C. Milk or Half-and-Half
  • 3 C. Cheddar Cheese, grated
  • Salt to taste
1) Sauté the onion in butter. Add flour, mustard, and cayenne; stir for 3 minutes.

2) Add broth, carrots, and potatoes. Bring to a boil, then reduce heat and simmer for 30 minutes.

3) Add milk or cream, and cheese; cook for 5 minutes, or until the cheese is melted. Salt to taste.

Yield: About 6 Servings.

    The recipe sounds better than the one I use so next time I make a batch of Potatoe soup it's this recipe I'll be using :-)

    Yes, I have been a Bright Lights leader. I am currently not teaching or part of a group because our family has been in the process of moving, among other things, for the past several months.

    I went to your girls' site, and I think that I have been there before. If I remember correctly, I also left a comment. :-) It is a neat website. They must have a lot of fun in their activities! The recipes look wonderful!
