In case you have a cookie craving and/or wondered what I've been doing this afternoon... :-)

Green Tomato Cookies
4 cups finely chopped green tomatoes
2 cups packed brown sugar, divided
2 T. lemon juice
1 tsp. lemon extract
3/4 cup butter, softened
1 1/2 cups flour
1/2 tsp. baking soda
1/2 tsp. salt
2 cups oats
1/2 cup chopped walnuts or pecans (optional)
Drain tomatoes in a mesh strainer for 10 min. In a saucepan, combine tomatoes, 1 cup of the brown sugar and the lemon juice. Simmer, uncovered for 20-25 min or until thickened and just about all the liquid is gone. Remove from the heat and stir in extract; set aside. In a mixing bowl, cream the butter and remaining brown sugar. Add flour, baking soda and salt; mix well. Stir in oats and nuts. Press 2 1/2 cups on the bottom of a greased 9x13 baking pan. Spread tomato mixture over crust. Crumble remaining oat mixture on top. Bake at 375º for 30-35 min. or until golden brown. Cool. Cut and serve Yield about 2 dozen.
